Vegetarian Recipe: Asian Mashed Potatoes

Asian Mashed Potatoes

So good, you will (mostly likely) eat them without butter!

Ingredients

  • 5 large Yukon Gold or Russet potatoes, scrubbed
  • 2 Tbsp. olive oil
  • 1 large onion, chopped
  • 1 1/2 cups plain yogurt or soy yogurt
  • 1 4 ounce can of chopped mild chilies or 1 fresh jalapeno, chopped
  • 2 Tbsp. minced cilantro
  • 1.2 tsp. minced fresh ginger or to taste

Directions

  1. Pierce potatoes a few times with a fork then microwave until cooked
  2. Once potatoes are cooked, let them cool so they can be handled
  3. In a small pan, heat oil over medium heat.
  4. Add onions and cook until brown, stirring occasionally
  5. Peel potatoes and mash in a large serving bowl
  6. Stir in onions, yogurt, chilies, cilantro and ginger
  7. Season with salt and pepper to taste
