Vegetarian Recipe: Asian Mashed Potatoes

Asian Mashed Potatoes
So good, you will (mostly likely) eat them without butter!
Ingredients
- 5 large Yukon Gold or Russet potatoes, scrubbed
- 2 Tbsp. olive oil
- 1 large onion, chopped
- 1 1/2 cups plain yogurt or soy yogurt
- 1 4 ounce can of chopped mild chilies or 1 fresh jalapeno, chopped
- 2 Tbsp. minced cilantro
- 1.2 tsp. minced fresh ginger or to taste
Directions
- Pierce potatoes a few times with a fork then microwave until cooked
- Once potatoes are cooked, let them cool so they can be handled
- In a small pan, heat oil over medium heat.
- Add onions and cook until brown, stirring occasionally
- Peel potatoes and mash in a large serving bowl
- Stir in onions, yogurt, chilies, cilantro and ginger
- Season with salt and pepper to taste
