Vegetarian Recipe: Baked Onion Rings

Baked Onion Rings

So much better than deep fried!

Ingredients

  • 1/2 cup breadcrumbs
  • 2 eggs
  • 2 tbsps low-fat buttermilk or soy creamer
  • 1 tsp garlic salt (or other herbs)
  • 8 1/2 inch thick onion rings (use sweet yellow onions, Maui, or Vidalia)

Directions

  1. Preheat oven to 400 degrees
  2. Put breadcrumbs into a shallow bowl
  3. Crack eggs into another shallow bowl then stir in buttermilk and garlic salt
  4. Dip onion slices into egg mixture and then into breadcrumbs (ensure they are fully coated)
  5. Bake onion rings on a cookie sheet covered in parchment paper for 20 minutes (flip the rings half way through)
