Vegetarian Recipe: Baked Onion Rings

Baked Onion Rings
So much better than deep fried!
Ingredients
- 1/2 cup breadcrumbs
- 2 eggs
- 2 tbsps low-fat buttermilk or soy creamer
- 1 tsp garlic salt (or other herbs)
- 8 1/2 inch thick onion rings (use sweet yellow onions, Maui, or Vidalia)
Directions
- Preheat oven to 400 degrees
- Put breadcrumbs into a shallow bowl
- Crack eggs into another shallow bowl then stir in buttermilk and garlic salt
- Dip onion slices into egg mixture and then into breadcrumbs (ensure they are fully coated)
- Bake onion rings on a cookie sheet covered in parchment paper for 20 minutes (flip the rings half way through)
